  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • Powdered sugar for rolling

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the egg, lemon juice, and lemon zest until well combined.
  • In another bowl, whisk together the flour, baking powder, salt, and baking soda.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Chill the dough in the refrigerator for about 30 minutes.

Baking

  • Roll the dough into small balls and then roll each ball in powdered sugar, coating them well.
  • Place the balls on the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until they are set but still soft.
  • Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Serve cookies fresh out of the oven for the best flavor. Store in an airtight container at room temperature for up to a week. For longer storage, refrigerate or freeze.
