  • 2 pieces chicken breasts, diced
  • 1 package gnocchi You can use store-bought for convenience.
  • 2 tablespoons olive oil For browning the chicken.
  • 1 cup heavy cream You can substitute half-and-half for a lighter version.
  • 1 whole lemon (zest and juice) Adds freshness and acidity.
  • 2 cloves garlic, minced Fresh garlic is recommended.
  • Salt and pepper to taste For seasoning.
  • Fresh parsley for garnish Adds color and freshness.

Preparation

  • In a large skillet, heat olive oil over medium heat.
  • Add the diced chicken and cook until browned and cooked through.
  • Remove the chicken from the skillet and set aside.
  • In the same skillet, add garlic and sauté for about 1 minute.

Cooking

  • Add heavy cream, lemon zest, and lemon juice; stir until heated through and slightly thickened.
  • Cook the gnocchi according to package instructions, then drain.
  • Add the cooked gnocchi and chicken back to the skillet, mixing gently to coat.
  • Season with salt and pepper to taste.
  • Serve warm, garnished with fresh parsley.

Notes

Store leftovers in an airtight container in the refrigerator and consume within three days. Reheat on low heat with a splash of cream or broth added.
