For the crust

  • 1.5 cups graham cracker crumbs
  • 0.5 cups unsalted butter, melted
  • 2 tablespoons granulated sugar

For the filling

  • 1 package cream cheese, softened (8-ounce)
  • 0.5 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup sour cream
  • 0.25 cups fresh lemon juice
  • 1 piece zest of 1 lemon
  • 1 teaspoon baking powder

For garnish

  • Fresh berries (strawberries, blueberries, raspberries)
  • Whipped cream
  • Lemon slices or zest
  • Powdered sugar for dusting

Instructions
 

Preparation

  • Preheat your oven to 325°F (163°C).
  • In a medium bowl, mix the graham cracker crumbs, melted butter, and 2 tablespoons of sugar until combined and the texture resembles wet sand.
  • Press the mixture firmly into the bottom of a 9-inch springform pan, ensuring an even layer.
  • Bake the crust for 10 minutes, then remove from the oven and let it cool completely.

Filling

  • In a mixing bowl, beat the softened cream cheese with ½ cup sugar until smooth.
  • Add in vanilla extract and beat until combined.
  • Incorporate eggs one at a time, mixing well after each addition and scraping down the sides of the bowl.
  • Stir in the sour cream, lemon juice, lemon zest, and baking powder until just combined.
  • Pour the cheesecake filling into the cooled graham cracker crust and smooth the top.

Baking

  • Bake for 55-60 minutes, or until the edges are set but the center has a slight jiggle.
  • Turn off the oven, crack the door open, and let the cheesecake cool inside for one hour.
  • Remove from the oven and refrigerate for at least 4 hours or overnight for best results.

Serving

  • Serve chilled, garnished with fresh berries, whipped cream, and powdered sugar.
