Base

  • 1 piece pre-made pie crust Use a pre-made pie crust to simplify the process.

Filling

  • 1 cup heavy cream Whip to soft peaks.
  • 1/2 cup sugar Gradually added to the whipped cream.
  • 1 cup strong brewed coffee, cooled Ensure the coffee is strong for flavor.
  • 1/4 cup Irish whiskey Substitute with extra coffee or non-alcoholic syrup if preferred.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon gelatin (optional) For stabilization.
  • Chocolate shavings For garnish.

Preparation

  • In a mixing bowl, whip the heavy cream until soft peaks form.
  • Gradually add sugar and continue to whip until stiff peaks form.
  • In another bowl, combine the cooled coffee, Irish whiskey, vanilla extract, and gelatin (if using).
  • Gently fold the coffee mixture into the whipped cream until well combined.
  • Pour the mixture into the pre-made pie crust and smooth the top.

Chilling

  • Refrigerate the pie for at least 4 hours or until set.

Serving

  • Before serving, garnish with chocolate shavings.

Notes

Serve straight from the refrigerator. Use a sharp knife for cutting and consider dipping it in hot water for easier slicing. This pie pairs well with whipped cream or ice cream.
