  • 1 kg 1 lamb shoulder (cut into chunks)
  • 2 tbsp olive oil For browning the lamb
  • 3 pieces onions (sliced/chopped)
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 2 tbsp honey To enrich the dish
  • 100 ml water Scant 1/2 cup
  • to taste Salt
  • to taste Pepper
  • 4 pieces Williams pears Added near the end

Preparation

  • Heat the olive oil in a tagine (or heavy pot) over high heat.
  • Add the lamb and brown about 3 minutes per side.
  • Add the onions, ground ginger, and ground cinnamon. Stir in the honey and add the water.
  • Season with salt and pepper, then add the pears. Cover and cook over low heat for about 45 minutes.

Notes

For best results, consider marinating the lamb overnight in spices and olive oil. You can also adjust seasonings and experiment with different dried fruits.
