Ingredients
  

For the Marinade

  • 2 tbsp Madras curry powder
  • 1 cup yogurt Preferably plain unsweetened yogurt.
  • 1⅛ lb leg of lamb, cut into pieces Use a tender cut for the best results.

For Cooking

  • 1 large onion, sliced/chopped A yellow or white onion works best.
  • 2 tbsp flavorless cooking oil Canola or vegetable oil is recommended.

Preparation

  • Mix the Madras curry powder with the yogurt, then add the lamb and coat well.
  • Slice or chop the onion.

Cooking

  • Heat the oil in a pot over medium heat and cook the onion for 5 minutes until soft and translucent.
  • Add the yogurt-curry lamb mixture and stir.
  • Lower the heat and simmer for 25 minutes over low heat, stirring occasionally.

Notes

Serve with basmati rice or naan for a complete meal. Garnish with cilantro or mint for added freshness.
