Ingredients
  

For the Marinade

  • 1/4 cup soy sauce
  • 2 tablespoons sake
  • 2 tablespoons mirin
  • 1 tablespoon sugar
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 tablespoon sesame oil

Main Ingredients

  • 4 pieces chicken thighs, bone-in and skin-on
  • 1 bunch green onions, for garnish

Preparation

  • In a bowl, mix soy sauce, sake, mirin, sugar, garlic, ginger, and sesame oil to make the marinade.
  • Place the chicken thighs in a resealable bag or bowl and pour the marinade over them. Let it marinate for at least 30 minutes, preferably longer.

Cooking

  • Preheat the grill to medium heat.
  • Remove chicken from the marinade and grill for about 6-7 minutes on each side until the chicken is cooked through and has nice grill marks.
  • Garnish with chopped green onions and serve hot.

Notes

Choose high-quality chicken thighs for the best flavor. Marinate overnight for maximum flavor enhancement. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C). Avoid pressing down on the chicken while grilling to retain juiciness.
