  • 2 cups cooked rice (preferably day-old) Day-old rice is drier and prevents mushiness.
  • 4 cloves garlic, minced Finely mince garlic for maximum flavor.
  • 3 tablespoons vegetable oil (or sesame oil) Use either for flavor.
  • 2 large eggs, beaten Scramble until set.

Vegetables and Seasonings

  • 1 cup mixed vegetables (like peas, carrots, and corn) Use fresh or frozen mixed vegetables.
  • 3 tablespoons soy sauce Adjust to taste.
  • 1 tablespoon oyster sauce (optional) Can be omitted for vegetarian option.
  • 3 tablespoons green onions, sliced For garnish.
  • 1 teaspoon sesame seeds For garnish.
  • Salt and pepper to taste

Cooking

  • Heat the vegetable or sesame oil in a large frying pan or wok over medium-high heat.
  • Sauté the minced garlic until fragrant, then add the mixed vegetables and cook until tender.
  • Push the vegetables to one side, pour in the beaten eggs, and scramble until set.
  • Add the day-old rice, breaking up any clumps, and mix thoroughly with the vegetables and egg.
  • Stir in soy sauce and oyster sauce, adjusting seasonings as needed.
  • Finish with sliced green onions and sesame seeds before serving.

Notes

Serve hot, garnished with additional green onions and sesame seeds. Great with side dishes like cucumber salad or miso soup.
