Ingredients
  

For the Meatballs

  • 1 lb ground beef
  • 1/2 lb ground pork
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • to taste salt and pepper

For the Soup

  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup spinach
  • for garnish fresh basil for decoration before serving

Instructions
 

Preparation

  • In a bowl, mix together the ground beef, ground pork, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Form into small meatballs.

Cooking

  • In a large pot, bring chicken broth to a simmer over medium heat.
  • Add meatballs, diced tomatoes, carrots, and celery. Cook for about 15-20 minutes until meatballs are cooked through and vegetables are tender.
  • Stir in spinach and cook for an additional 2-3 minutes until wilted.
  • Serve hot, garnished with fresh basil.

Notes

Adjust the seasoning as per your taste preferences. Left-over soup tends to develop a richer flavor after a day in the fridge.
