  • 1.5 lbs baby potatoes, halved
  • 1/2 cup grated Parmesan cheese

  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup olive oil
  • 1/4 cup chopped fresh parsley for garnish

Preparation

  • Place the chicken breasts and halved baby potatoes in the bottom of your crockpot, spreading them out evenly.
  • In a separate bowl, mix together the grated Parmesan cheese, minced garlic, dried oregano, dried basil, salt, black pepper, and olive oil until well combined.
  • Pour the mixture over the chicken and potatoes, ensuring everything gets a good coating.
  • Cover the crockpot and cook on low for about 6 hours, or on high for 3 hours.
  • Once cooked, sprinkle the fresh parsley on top before serving.

Notes

For more depth of flavor, consider searing the chicken before placing in the crockpot. Feel free to add your favorite vegetables. Ensure chicken reaches 165°F (75°C) before serving. For a creamier sauce, mix in heavy cream during the last hour of cooking.
