Ingredients
  

For the Filling

  • 4 large potatoes (like Russets), peeled and cubed Russets are recommended for their starchy content and fluffy texture.
  • 1 cup heavy cream Add more for a creamier filling if desired.
  • 4 tablespoons unsalted butter 1 tablespoon for sautéing onions.
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon nutmeg
  • 1 cup shredded sharp cheddar cheese
  • 1 onion finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons fresh chives, chopped

For the Crust

  • 1 pre-made pie crust (store-bought or homemade)

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large pot of salted water, boil the cubed potatoes for about 15-20 minutes, or until fork-tender. Drain and set aside.
  • In the same pot, return the drained potatoes and add the heavy cream, butter, salt, black pepper, and nutmeg. Mash until smooth and creamy. Set aside to cool slightly.

Cooking

  • In a skillet, melt 1 tablespoon of butter over medium heat. Add the chopped onion and sauté until translucent (about 5 minutes). Add the minced garlic and cook for another minute until fragrant.
  • Stir the sautéed onions and garlic into the mashed potato mixture. Add half of the shredded cheddar cheese and the chopped chives, mixing until everything is well combined.
  • Pour the potato mixture into the pie crust, spreading it evenly. Top with the remaining cheddar cheese.
  • Bake in the preheated oven for 25-30 minutes, or until the top is golden and the cheese is bubbly.
  • Remove from the oven and let it cool for about 10 minutes before slicing.

Notes

Serve warm with a crisp green salad or steamed vegetables. For extra flavor, add sour cream or chives as a garnish. Experiment with different cheeses for a twist.
