Ingredients
  

For the filling

  • 4 large potatoes, peeled and diced Starchy varieties like Russets or Yukon Golds work best.
  • 1 cup milk
  • 1 cup shredded cheddar cheese Feel free to mix in other cheeses for added flavor.
  • 1 onion chopped Sauté until translucent.
  • 2 tablespoons butter
  • Salt and pepper to taste Make sure to season the filling well.

For the crust

  • 1 pre-made pie crust Use a store-bought or homemade crust.

Preparation

  • Preheat the oven to 375°F (190°C).
  • Boil the diced potatoes until tender, about 15-20 minutes. Drain and mash.
  • In a skillet, melt the butter over medium heat and sauté the onion until translucent.
  • In a bowl, combine the mashed potatoes, sautéed onion, milk, salt, and pepper. Mix until smooth.
  • Stir in the shredded cheese.

Assembly and Baking

  • Pour the potato mixture into the pie crust and spread evenly.
  • Bake in the preheated oven for 30-35 minutes, or until the crust is golden and the filling is hot.
  • Let cool slightly before serving.

Notes

For best results, serve warm with a salad or roasted vegetables. Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days, or frozen for 2-3 months.
