Preparation

  • In a large mixing bowl, combine the powdered sugar, peanut butter, softened butter, and vanilla extract. Mix until well blended and smooth.
  • Stir in the shredded coconut and ground cinnamon until evenly distributed.
  • Using your hands, shape the mixture into small potato-shaped balls, about 1 inch in size.
  • Roll each ball in cocoa powder to coat completely, giving them a realistic potato appearance.
  • Place the coated candies on a baking sheet lined with parchment paper.
  • Refrigerate for at least 30 minutes to firm up before serving.

Notes

Store candies in an airtight container in the refrigerator for up to two weeks or freeze for up to three months. Roll your hands in powdered sugar if the mixture becomes sticky.
