Ingredients
  

Meat

  • 2 pounds beef chuck, cut into cubes Chuck roast is ideal for slow cooking.

Vegetables

  • 1 tablespoon olive oil For searing the beef.
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 cloves garlic, minced
  • 4 potatoes, peeled and diced Use hearty potatoes.

Liquids & Seasoning

  • 2 tablespoons tomato paste For added richness.
  • 1 bottle Guinness stout (14-16 ounces) Provides robust flavor.
  • 4 cups beef broth
  • 2 tablespoons Worcestershire sauce Adds depth of flavor.
  • Salt and pepper to taste

Garnish

  • Fresh parsley for garnish Adds freshness and color.

Preparation

  • In a large pot or Dutch oven, heat the olive oil over medium-high heat.
  • Add the beef cubes and sear until browned on all sides.
  • Remove the beef and set aside. In the same pot, add the onions, carrots, and garlic, and cook until softened.

Cooking

  • Stir in the tomato paste, then return the beef to the pot.
  • Pour in the Guinness stout, beef broth, and Worcestershire sauce.
  • Add the potatoes and bay leaf.
  • Bring to a boil, then reduce heat to low and simmer for 1.5 to 2 hours, until the beef is tender.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh parsley.
