Preparation

  • Peel and cube the potatoes.
  • Boil the potatoes in salted water until tender, about 15-20 minutes.
  • Drain the potatoes and return them to the pot.
  • Add the milk, butter, and chopped scallions to the potatoes.

  • Season with salt and pepper to taste.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Can be frozen in portions and reheated on the stove with a splash of milk to restore creaminess.
