  • 1 small Onion (finely diced)
  • ½ tablespoon Chili Powder
  • 3 tablespoons Old Bay Seasoning
  • 1 tablespoon Brown Sugar
  • 6 cloves Garlic (finely diced)
  • 1 Lemon Juiced
  • 2 sprigs Fresh Thyme or 1 teaspoon dried
  • Black Pepper To taste
  • Salt To taste
  • 250 grams Unsalted Butter

  • In a skillet over medium heat, melt the unsalted butter.
  • Add the finely diced onion and garlic to the skillet, cooking until the onion is translucent and the garlic is fragrant.
  • Stir in the smoked paprika, chili powder, Old Bay seasoning, and brown sugar, allowing the spices to bloom in the butter for a minute.
  • Squeeze in the juice of the lemon and toss in the fresh thyme (or dried thyme), mixing well.
  • Adjust the flavor with salt and black pepper to taste.
  • Allow the sauce to simmer for a couple of minutes until well combined.
  • Remove from heat and let it cool slightly before using.
  • For best flavor, let it sit for 30 minutes before serving to allow the spices to meld.
  • Serve it warm or transfer to an airtight container for storage.
