Preparation

  • Place the saucepan over medium-low heat. Warm the mixture until it thins and small bubbles form at the edges. Do not boil.
  • Remove from heat and let the honey infuse for at least 30 minutes. The longer it steeps, the spicier it will become.
  • For a smooth honey, strain through a fine-mesh sieve. Pour into an airtight jar for storage.
