Ingredients
  

For the Truffles

  • 350 g dark chocolate chips High quality preferred
  • 230 ml double cream Can use heavy cream as a substitute
  • 250 g milk chocolate Broken into pieces for melting
  • 1 handful milk chocolate shavings For decoration

Instructions
 

Preparation

  • Put the dark chocolate chips and double cream into a medium saucepan and warm over low heat, stirring, until melted and smooth.
  • Pour into a heatproof container and chill in the refrigerator for 2 hours.
  • Scoop up 2 tablespoons of the chilled mixture and place on a freezer-proof plate in a round blob. Repeat with the remaining mixture to make 12 blobs, ensuring they don’t touch.
  • Transfer to the freezer and chill for 1 hour.

Coating

  • Set a cooling rack over a sheet of baking paper. Melt the milk chocolate.
  • Remove the chocolate blobs from the freezer and roll into balls with your hands.
  • Using 2 forks, coat each ball in the melted milk chocolate, letting excess drip off.
  • Place on the cooling rack and sprinkle with milk chocolate shavings.

Finishing

  • Chill in the refrigerator for 30 minutes, or until set.
  • Carefully pop them off the rack and store in an airtight container in the freezer for up to 3 months.

Notes

These truffles can be personalized with different coatings like crushed nuts or sprinkles. They make excellent gifts and can be served with hot chocolate or dessert wine for an elegant presentation.
