Ingredients
  

For the Chicken

  • 4 pieces boneless, skinless chicken breasts
  • 1/4 cup honey
  • 1/4 cup lime juice
  • 2 tablespoons olive oil

For the Mango Salsa

  • 1 piece ripe mango, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 piece lime, juiced
  • 1 piece jalapeño, seeded and minced (optional) Add for extra heat

Instructions
 

Preparation

  • In a bowl, whisk together honey, lime juice, olive oil, salt, and pepper.
  • Marinate the chicken breasts in the mixture for at least 30 minutes.

Cooking

  • Preheat the grill (or oven) to medium-high heat.
  • Grill the chicken for about 6-7 minutes per side or until cooked through.

Mango Salsa

  • In a separate bowl, combine mango, red onion, cilantro, lime juice, and jalapeño for the salsa.

Serving

  • Serve the grilled chicken topped with mango salsa. Enjoy with rice, salad, or tortillas.

Notes

To elevate flavor, consider marinating chicken overnight. Serve with various sides for added versatility. Storing tips: Chicken can be stored for 3 days; salsa for 2 days. Soups or side dishes can also be created to accompany.
