Ingredients
  

For the Chicken Marinade

  • 1 lb chicken breasts (boneless, skinless)
  • 1/4 cup honey
  • 2 limes (juiced)
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper (to taste)

For the Avocado Rice

  • 1 cup rice (uncooked)
  • 1 avocado (diced)
  • 1/2 cup cilantro (chopped)
  • 1/4 cup sour cream

Instructions
 

Preparation

  • In a bowl, whisk together honey, lime juice, chili powder, cumin, salt, and pepper. Coat the chicken breasts in the marinade and let them sit for at least 30 minutes.
  • Prepare the rice according to package directions. Once fluffy and tender, set aside to cool.

Cooking

  • Heat your grill or skillet over medium heat. Cook the marinated chicken for about 6-7 minutes on each side until it’s nicely browned and no longer pink inside. Let rest before slicing.

Assembly

  • In a large bowl, combine the cooked rice, diced avocado, chopped cilantro, and sour cream. Gently fold everything together until well mixed and creamy.
  • On serving plates, spoon a generous scoop of the creamy avocado rice. Top with the sliced honey lime chicken, and drizzle extra lime juice over the top.

Notes

Marinate chicken overnight for deeper flavor. Serve warm or at room temperature. For added freshness, sprinkle chopped cilantro on top before serving.
