Main Ingredients

  • 8 pieces chicken thighs
  • 2 pieces lemons (zest of 2 lemons, juice of 1 lemon, cut the other lemon into slices)
  • 3 tbsp honey
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper (freshly ground)
  • 1 tsp red chili flakes
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ½ tsp mustard powder

Preparation

  • Prepare the chicken by cleaning and drying the thighs.
  • In a bowl, mix lemon zest, juice, honey, olive oil, salt, black pepper, red chili flakes, paprika, garlic powder, and mustard powder to create the marinade.
  • Coat the chicken thighs in the marinade and let them sit for at least 30 minutes, or up to overnight for more flavor.

Cooking

  • For the oven-baked method, preheat the oven to 400°F (200°C), arrange the chicken on a baking sheet, and add lemon slices. Bake for 35-40 minutes.
  • For the air fryer method, preheat to 375°F (190°C), place chicken in the basket, and cook for 25-30 minutes, flipping halfway.

Notes

For the best results, marinate the chicken for at least 30 minutes but preferably up to several hours or overnight. Adjust the level of spice according to your preference.
