Ingredients
  

For the Marinade

  • 2 tbsp olive oil
  • ¼ cup honey
  • 4 cloves garlic, minced
  • 3 tbsp lemon juice
  • 1 tsp cracked black pepper (about 40 cracks)
  • 2 ¼ tsp kosher salt or to taste

For the Chicken

  • 2 lbs boneless skinless chicken thighs
  • Minced parsley, optional for garnish

Preparation

  • Pat the boneless skinless chicken thighs dry with a paper towel to help the marinade stick.
  • In a bowl, whisk together the olive oil, honey, minced garlic, lemon juice, cracked black pepper, and kosher salt until well combined.
  • Place the chicken thighs in a shallow dish or resealable plastic bag and pour the marinade over the chicken, ensuring each piece is well coated.
  • Refrigerate and let the chicken marinate for at least 30 minutes, ideally for 1-2 hours.

Cooking

  • Heat a large skillet over medium-high heat. Once hot, add the marinated chicken thighs.
  • Cook for about 6-7 minutes on each side or until the chicken reaches an internal temperature of 165°F (74°C) and the sauce has thickened into a glaze.
  • Remove the chicken from the skillet and place it on a serving plate.
  • Spoon any remaining glaze over the chicken and garnish with minced parsley if desired.

Notes

For enhanced flavor, consider marinating the chicken overnight. Experiment with lime juice or add red pepper flakes for extra heat. Fresh herbs can also elevate the dish.
