Honey Garlic Chicken Thighs

Ingredients
  

For the Chicken

  • 8 pieces chicken thighs (skinless and boneless)
  • 2 tbsp cornflour (cornstarch)
  • ½ tsp salt
  • ½ tsp pepper
  • 2 tbsp vegetable oil for frying
  • 1 tbsp unsalted butter
  • 4 cloves minced garlic

For the Sauce

  • 110 g honey
  • 80 ml chicken stock
  • 1 tbsp rice vinegar
  • 1 tbsp light soy sauce
  • 1 tbsp finely chopped fresh parsley for garnish
  • ½ tsp chili flakes for garnish, adjust to taste

For Serving

  • to taste boiled rice for serving

Instructions
 

Preparation

  • Place the chicken thighs in a bowl and add the cornflour, salt, and pepper. Toss the chicken until fully coated.
  • Heat the oil in a large frying pan over high heat.

Cooking

  • Add the chicken thighs to the pan and cook on one side until golden brown, about 4-5 minutes. Turn over and cook for an additional 2 minutes.
  • Add the butter to the pan; let it melt, then add the garlic and stir together.
  • Reduce the heat to medium to prevent the garlic from burning, then make the sauce by combining the honey, stock, rice vinegar, and light soy sauce in a bowl.
  • Add the sauce to the pan. Increase the heat to bring it to a boil, then reduce to simmer for 4-5 minutes until the sauce thickens and the chicken is cooked through.
  • Sprinkle chopped parsley and chili flakes on top before serving.

Notes

Serve with boiled rice to soak up the sauce. Can be garnished with parsley or sesame seeds. Best when enjoyed fresh but can be stored in an airtight container for up to 3 days in the refrigerator.
