  • 1 cup sugar
  • 1 cup water
  • 1/2 cup white vinegar
  • 2 tablespoons fish sauce Can substitute with soy sauce for vegan option
  • 2 tablespoons cornstarch
  • 2 tablespoons water (for cornstarch slurry)
  • 2 cloves garlic, minced Use fresh for robust flavor
  • 1-2 teaspoons red chili flakes Adjust for spice level

Preparation

  • In a saucepan, combine the sugar, water, white vinegar, fish sauce, and minced garlic. Bring to a boil over medium heat, stirring occasionally.
  • Once the mixture is boiling, reduce heat and let it simmer for about 5 minutes.
  • In a small bowl, mix the cornstarch and 2 tablespoons of water to create a slurry.
  • Add the cornstarch slurry to the sauce, stirring continuously until it thickens to the desired consistency.
  • Stir in the red chili flakes, adjusting the amount to your preferred spice level.
  • Remove from heat and let the sauce cool before serving.

Notes

Store in an airtight container in the refrigerator for up to three weeks. If the sauce becomes too thick, mix in a teaspoon or two of water to regain desired consistency.
