  • 2 cups ripe tomatoes, chopped Choose ripe tomatoes for the best flavor.
  • 1/4 cup apple cider vinegar
  • 1 tablespoon honey or maple syrup Substitute according to your dietary needs.
  • 1 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon smoked paprika Adjust for a spicier taste.
  • 1/4 teaspoon black pepper

Preparation

  • Preheat the oven to 400°F (200°C). Spread the chopped tomatoes on a baking sheet.
  • Roast the tomatoes for about 30 minutes until they are soft and slightly caramelized.
  • In a blender or food processor, combine roasted tomatoes and apple cider vinegar. Add honey or maple syrup, salt, onion powder, garlic powder, cinnamon, smoked paprika, and black pepper. Blend until smooth.
  • Transfer the ketchup mixture to a saucepan over medium heat. Simmer for about 15 minutes, stirring occasionally, until it thickens to your desired consistency.
  • Allow the ketchup to cool, then transfer to a jar for storage.

Notes

Store in an airtight container in the refrigerator for about two weeks. For longer storage, freeze in small portions. Label the container with the date for freshness tracking.
