Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 ¼ tsp kosher salt

Wet Ingredients

  • ½ cup unsalted butter, very cold, cut small
  • ¾ to 1 cup milk or buttermilk Adjust for consistency

Preparation

  • Preheat oven to 450°F (230°C). Line a baking sheet with parchment paper or butter a cast-iron skillet.
  • In a large bowl, whisk together all-purpose flour, baking powder, and kosher salt.

Mixing

  • Cut in the cold butter into the flour mixture until it looks like coarse meal with some pea-sized butter pieces remaining.
  • Stir in ¾ cup of milk or buttermilk until just combined. If too dry, add more milk incrementally until a thick, lumpy batter forms.

Baking

  • Scoop about ¼ cup portions of dough onto the prepared baking sheet or skillet, arranging them with a little space in between.
  • Bake for 16-20 minutes until golden brown and fragrant.
  • Optional: Brush tops with melted butter and sprinkle with flaky salt before serving.

Notes

Store in an airtight container at room temperature for up to two days, or freeze for up to three months. Reheat at 350°F (175°C) for 10-15 minutes to restore softness.
