  • 6 large large eggs
  • 1 cup cottage cheese
  • 1 teaspoon fine sea salt
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1 cup fresh baby spinach (chopped)
  • 1/4 cup fresh basil leaves (chopped)
  • 1/2 cup crumbled feta
  • to taste black pepper

Preparation

  • Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing it or using muffin liners.
  • In a large bowl, whisk together the eggs and cottage cheese until smooth. Add in the salt and pepper to taste.
  • Fold in the chopped sun-dried tomatoes, spinach, basil, and crumbled feta until evenly combined.
  • Pour the mixture into the prepared muffin tin, filling each cup about three-quarters full.
  • Bake for 20-25 minutes, or until the egg bites are set and lightly golden on top.
  • Allow to cool for a few minutes before carefully removing the egg bites from the tin.

Notes

High Protein Egg Bites can be served warm or stored in the refrigerator for future enjoyment. They can also be frozen for extended storage. Consider adding cooked bacon or different vegetables for variations.
