Ingredients
  

For the filling

  • 1 cup ricotta cheese Use high-quality for a creamier filling.
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh basil, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 clove garlic, minced
  • Salt and pepper, to taste

For the chicken

  • 4 pieces boneless, skinless chicken breasts Pounded to an even thickness.
  • Olive oil For searing.

For assembly

  • 1 cup marinara sauce For baking.

Preparation

  • Preheat the oven to 375°F (190°C).
  • Mix ricotta cheese, Parmesan cheese, basil, parsley, minced garlic, salt, and pepper in a bowl until well combined.
  • Pound chicken breasts to an even thickness, spread the ricotta mixture on each breast, roll them tightly and secure with toothpicks.

Cooking

  • Heat olive oil in an oven-safe skillet and sear the rolls until golden brown.
  • Pour marinara sauce over the chicken and transfer the skillet to the oven.
  • Bake for 25-30 minutes until the chicken is cooked through. Allow to rest before serving.

Notes

For a variation, add spinach or sun-dried tomatoes to the filling. Ensure that the marinara sauce is gluten-free if making a gluten-free version.
