For the Mashed Potatoes

  • 2 cups potatoes, peeled and cubed Yukon Gold or Russet are recommended.
  • 1/4 cup milk
  • 2 tablespoons butter

For the Honey Glazed Carrots

  • 4 pieces carrots, sliced
  • 2 tablespoons honey
  • 1 tablespoon butter for carrots

Preparation

  • Preheat the oven to 400°F (200°C).
  • Season the chicken thighs with olive oil, herbs, salt, and pepper. Place them in a baking dish.

Cooking Chicken

  • Bake the chicken for 25-30 minutes until cooked through.

Mashed Potatoes

  • While the chicken is baking, boil the potatoes in salted water until tender, about 15 minutes.
  • Drain and mash the potatoes with milk and butter until smooth.

Honey Glazed Carrots

  • In a skillet, melt butter over medium heat, add sliced carrots, and drizzle with honey.
  • Cook until carrots are tender and glazed, about 5-7 minutes.
