  • 1 cup rice Use long-grain rice like basmati or jasmine.
  • 2 cups chicken broth For added flavor.
  • 2 tablespoons olive oil For searing the chicken.
  • 2 cloves garlic, minced Enhances flavor.
  • 1 teaspoon dried herbs (such as thyme or rosemary) For seasoning.

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a skillet, heat olive oil over medium heat.
  • Season chicken thighs with salt, pepper, and dried herbs.
  • Sear the chicken thighs for 4-5 minutes on each side until golden brown.
  • Remove chicken and set aside.
  • In the same skillet, add minced garlic and cook for 1 minute.

Cooking

  • Add rice and stir to combine.
  • Pour in chicken broth, bring to a boil, then reduce heat to low.
  • Nestle the chicken thighs on top of the rice.
  • Cover and bake in the oven for 25-30 minutes, or until chicken is cooked through and rice is tender.

Serving

  • Garnish with fresh herbs if desired before serving.

Notes

For enhanced flavor, marinate the chicken thighs in olive oil, herbs, salt, and pepper for a few hours. You can also add vegetables like peas, carrots, or bell peppers.
