Ingredients
  

For the cake

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 2 large eggs At room temperature for better mixing.
  • 1/2 cup vegetable oil
  • 1/2 cup whole milk At room temperature.

For the mousse

  • 1 cup dark chocolate chips Use high-quality chocolate for better flavor.
  • 1 cup fresh raspberries Can substitute with frozen, properly thawed.
  • 1 tsp agar-agar powder Can substitute with gelatin, note that texture may vary.

Preparation

  • Preheat the oven to 350°F (175°C) and grease two round cake pans.
  • In a bowl, whisk together flour, cocoa powder, sugar, and baking powder.
  • In a separate bowl, mix eggs, vegetable oil, and milk until frothy. Combine with dry ingredients until just mixed.
  • Divide the batter between pans and bake for 25-30 minutes or until a toothpick comes out clean.
  • Cool completely.

Mousse Preparation

  • Melt dark chocolate chips; mix with fresh raspberries heated with agar-agar until dissolved to create mousse.

Assembly

  • Layer one cake with half the mousse, top with the second layer, then spread remaining mousse on top.
  • Chill the cake in the refrigerator for at least 2 hours to allow mousse to set.

Notes

Serve with whipped cream or raspberry sauce for enhanced presentation. Garnish with fresh raspberries or cocoa powder.
