  • 1 tablespoon Baking powder Avoid substituting directly with baking soda.
  • 1/4 teaspoon Salt
  • 1 teaspoon Ground cinnamon

Wet Ingredients

  • 1 large Egg Can substitute with a flax egg for vegan option.
  • 1/2 cup Milk Dairy-free milk can be used.

Fritter Components

  • 1 whole Fresh pineapple Sliced into rings.
  • 2 cups Vegetable oil Canola or coconut oil can be used.
  • 1 tablespoon Additional cinnamon and sugar Adjust mixture to liking.

Instructions

Preparation

  • Whisk together the flour, granulated sugar, baking powder, salt, and ground cinnamon in a medium-sized bowl.
  • In a separate bowl, beat the egg and then mix in the milk until well combined.
  • Gradually fold the wet ingredients into the dry ingredients, mixing until just combined and smooth.

Frying

  • Heat the vegetable oil in a deep pan over medium heat, ensuring there is enough oil to submerge the fritters.
  • Dip each pineapple ring into the batter, allowing any excess to drip off before placing it into the hot oil.
  • Fry the pineapple fritters for about 2-3 minutes per side, or until they are golden brown and crispy.
  • Once cooked, transfer the fritters to a paper towel-lined plate to drain excess oil.
  • While still warm, sprinkle each fritter with the additional cinnamon and sugar mixture for extra flavor.

Notes

Serve warm or at room temperature. Pair with honey or maple syrup for sweetness. Enjoy with whipped cream or vanilla ice cream for dessert.
