Ingredients

  • 1 tablespoon baking powder

  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter

For Cooking

  • 4 eggs (for frying) For serving with pancakes
  • 4 links sausage Cooked until browned

Preparation

  • In a bowl, mix the flour, sugar, baking powder, and salt together.
  • In another bowl, whisk together the milk, egg, and melted butter.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.

Cooking

  • Heat a griddle or non-stick pan over medium heat and pour 1/4 cup of batter for each pancake.
  • Cook until bubbles form, then flip and cook until golden brown.
  • In a separate pan, cook the sausage links until browned and cooked through.
  • Fry the eggs to your liking in the same pan.
  • Serve pancakes topped with fried eggs, sausage, and mixed berries.

Notes

Make sure not to overmix the pancake batter; just stir until combined for fluffier pancakes. Use a non-stick pan or griddle for best results and to prevent sticking. Experiment with different fruits for topping, like bananas or peaches, for variation. Store leftovers in airtight containers in the refrigerator for up to 3 days.
