Ingredients
  

Main Ingredients

  • 3-4 pounds corned beef brisket with spice packet
  • 4 medium carrots, peeled and cut into chunks
  • 6 small to medium yellow potatoes, halved
  • 1 small head green cabbage, cut into wedges Add during the last 30-45 minutes of cooking
  • 1 large onion, quartered
  • 3-4 cloves garlic, smashed
  • 4 cups beef broth Ensure it's gluten-free if needed

Spices and Flavorings

  • 1 packet pickling spice or homemade pickling spice
  • 2 pieces bay leaves
  • 1 teaspoon whole peppercorns (optional)
  • 1 teaspoon liquid smoke (optional) For a smokier flavor

Instructions
 

Preparation

  • Remove corned beef from packaging and rinse under cold water.
  • Place carrots, potatoes, and onion in the bottom of the slow cooker.
  • Set corned beef on top, fat side up. Sprinkle spice packet or pickling spices over the meat.
  • Add garlic and bay leaves.
  • Pour in beef broth until brisket is mostly covered.

Cooking

  • Cover and cook on low for 8-10 hours or high for 4-5 hours.
  • Add cabbage during the last 30-45 minutes of cooking.
  • Remove meat, rest for 10 minutes, then slice against the grain.
  • Serve with vegetables and cooking liquid.

Notes

For a complete meal, serve with whole-grain mustard or horseradish sauce and hearty bread. Leftovers can be stored in airtight containers for 3-4 days in the fridge or frozen for 2-3 months.
