Main Ingredients

  • 100 g rolled oats, divided Divided into half for processing.
  • 150 g very ripe bananas, peeled weight, mashed until smooth Use ripe bananas for natural sweetness.
  • 80 g milk or dark chocolate chips Adds flavor and sweetness.

Instructions
 

Preparation

  • Preheat the oven to 180°C (160°C fan) / 350°F / Gas 4.
  • Blend 50 g of the oats briefly until they become slightly fine.
  • In a medium bowl, combine the mashed bananas with the ground oats and the remaining whole oats. Stir until you get a thick, cookie-like mixture.
  • Fold in the chocolate chips until evenly spread through the mixture.
  • Scoop about 2 tablespoons for each cookie, shape lightly with your hands or spoon, and place on a baking tray lined with baking paper.
  • Continue until you have filled the tray with 12 cookies.

Baking

  • Bake for 12–14 minutes, or until the cookies are lightly golden and look set.
  • Let them rest on the tray for 15 minutes, then move to a wire rack and cool fully.

Notes

Store in an airtight container for up to 3 days, or freeze for up to 3 months. Allow ample space between cookies while storing to maintain fluffiness.
