  • 2 teaspoons olive oil For sautéing
  • 1 small onion (chopped)
  • 1 clove garlic (minced)
  • 1 jalapeno (seeded and diced)
  • 2 teaspoons fresh ginger (grated) Enhances flavor
  • 1.5 cups fresh pineapple (diced) Star ingredient
  • cup brown sugar For sweetness
  • 1 teaspoon dry mustard
  • teaspoon cayenne pepper (optional) For heat
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ cup pineapple juice
  • ¼ cup golden rum Optional, can substitute with fruit juice for vegan
  • cup ketchup
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon molasses

Instructions
 

Preparation

  • In a large saucepan, heat the olive oil over medium heat and add the onion and garlic. Cook for 3-4 minutes or until softened and slightly translucent.
  • Add the jalapenos and ginger and cook until fragrant, about 2 minutes.
  • Add the pineapple, brown sugar, dry mustard, cayenne pepper, salt, pepper, pineapple juice, golden rum, ketchup, apple cider vinegar, Worcestershire sauce, and molasses. Stir to combine.
  • Heat the sauce to boiling, then reduce heat to a rapid simmer and cook, uncovered for 15-20 minutes or until the mixture has reduced and thickened.
  • Transfer to a blender or food processor and pulse until the sauce is smooth.

Notes

Allow the sauce to cool completely before transferring it into an airtight container. For longer storage, consider freezing the sauce. Use ripe pineapple and fresh ginger for the best flavors.
