  • 1 cup uncooked orzo pasta Or any small pasta of your choice.
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium beef broth Use low-sodium for a healthier dish.
  • 1 tsp dried oregano
  • Salt and pepper (to taste)

Preparation

  • In a large skillet over medium heat, brown the ground beef, breaking it up as it cooks.
  • Add the chopped onion and sauté until translucent, then stir in the minced garlic and cook for another minute.

Cooking

  • Mix in the uncooked orzo pasta, then pour in the beef broth, add oregano, and season with salt and pepper.
  • Bring to a boil, then reduce heat to low, cover, and simmer for 10-12 minutes until orzo is tender and has absorbed most of the liquid.

Notes

To enhance flavor, consider adding bell peppers or mushrooms while browning the beef. For a kick, incorporate red pepper flakes.
