Ingredients
  

For the Pineapple

  • 1 piece fresh pineapple Choose a ripe pineapple for maximum sweetness.
  • 1/4 cup butter, melted
  • 1/4 cup dark brown sugar
  • 1/4 cup dark rum, optional Adds depth of flavor, can be omitted.
  • 1 teaspoon ground cinnamon
  • 1 pinch salt

Instructions
 

Preparation

  • Use a sharp knife to cut off the top and bottom of the pineapple and the rind.
  • Cut the pineapple into 3/4-1-inch spears or rings, using a small cutter to remove the core if using rings.
  • Place the pineapple pieces into a large zip-top bag and set aside.

Marinade

  • In a small bowl, whisk together melted butter, dark brown sugar, rum (if using), ground cinnamon, and a pinch of salt until well combined.
  • Pour the marinade into the bag with the pineapple, seal well, and gently toss to coat the fruit.
  • Refrigerate for about 20 to 30 minutes to marinate.

Grilling

  • Heat up your grill or grill pan to a medium temperature, ideally between 375°F and 400°F.
  • Place the marinated pineapple directly onto the grates and cook for about 4 to 6 minutes per side, brushing with the remaining marinade.
  • Transfer the grilled pineapple to a serving platter and serve immediately.

Notes

Grilled pineapple pairs wonderfully with ice cream, whipped cream, or as a side with grilled meats. Store leftovers in an airtight container in the fridge for 3 to 5 days.
