  • 2 pieces ripe peaches, halved and pitted Select ripe peaches for best flavor.
  • 1 cup blueberries
  • 4 cups mixed greens (such as arugula or spinach)
  • 1/4 cup feta cheese, crumbled Can substitute with vegan cheese for vegan option.
  • 1/4 cup walnuts, chopped Can substitute with other nuts as desired.

Dressing Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • to taste salt and pepper

Preparation

  • Preheat the grill to medium-high heat.
  • Grill the peach halves for 3-4 minutes on each side until grill marks appear and they are slightly softened.
  • In a large bowl, combine the mixed greens, blueberries, feta cheese, and walnuts.
  • Slice the grilled peaches and add them to the salad.
  • In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  • Drizzle the dressing over the salad and toss gently to combine.
  • Serve immediately and enjoy!

Notes

Best served fresh. Store salad components separately in airtight containers in the refrigerator to maintain freshness. Consume within one to two days.
