Preparation

  • Marinate the chicken breasts in olive oil, lemon juice, salt, and pepper for at least 30 minutes.

Cooking

  • Grill the marinated chicken until cooked through, about 6-7 minutes per side. Let rest before slicing.

Assembly

  • In a bowl, layer cooked rice or quinoa as the base.
  • Top with grilled chicken slices, cherry tomatoes, cucumber, red onion, bell pepper, feta cheese, and olives.
  • Drizzle with tzatziki sauce.
  • Serve with lemon wedges on the side for added flavor.

Notes

For a heartier option, add roasted chickpeas or legumes. Store components separately to maintain freshness, and reheat chicken and grains before serving.
