Ingredients
  

For the Chicken

  • 4 pieces Chicken breasts High-quality, preferably skinless
  • 4 tablespoons Olive oil For marination
  • 3 cloves Garlic Minced
  • 2 tablespoons Lemon juice Freshly squeezed
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper

For the Bowls

  • 2 cups Cooked quinoa or rice Serves as the base
  • 1 cup Cucumber Diced
  • 1 cup Cherry tomatoes Halved
  • 1 medium Red onion Sliced
  • 1/2 cup Kalamata olives Pitted
  • 1/2 cup Feta cheese Crumbled
  • 1 cup Tzatziki sauce For drizzling

For the Tzatziki Sauce

  • 1 cup Greek yogurt Base for the sauce
  • 1/2 cup Grated cucumber
  • 1 clove Garlic Minced
  • 1 tablespoon Lemon juice Freshly squeezed
  • 1/2 teaspoon Salt
  • 1 teaspoon Dill Fresh or dried

Instructions
 

Marination

  • Marinate the chicken breasts in olive oil, minced garlic, lemon juice, salt, and pepper for at least 30 minutes.

Cooking the Chicken

  • Grill or bake the chicken until fully cooked.

Preparing Tzatziki Sauce

  • Prepare the tzatziki sauce by mixing Greek yogurt, grated cucumber, minced garlic, lemon juice, salt, and dill.

Assembling the Bowls

  • In bowls, layer cooked quinoa or rice, sliced chicken, diced cucumber, halved cherry tomatoes, sliced red onion, Kalamata olives, and crumbled feta cheese.
  • Drizzle with tzatziki sauce and serve.
