Ingredients
  

Main Ingredients

  • 2 pounds beef, cubed Use high-quality beef chuck for best results.
  • 1 teaspoon cinnamon Can adjust to taste.
  • 1 cup dry red wine Choose a wine similar to what you will serve.
  • 4 cloves garlic, minced Enhances flavor depth.
  • 2 tablespoons olive oil For sautéing beef.
  • 2 onions, diced onions Adds sweetness to the dish.
  • 1 sprig rosemary Fresh herbs are preferred.
  • 2 tablespoons sunflower oil For frying pearl onions.
  • 4 tomatoes, chopped Fresh tomatoes enhance the sauce.

Cooking Liquid

  • 1 cup water To ensure proper pressure cooking.

Instructions
 

Preparation

  • Heat the olive oil in an Instant Pot turned to sauté mode.
  • Add cubed beef and sauté, turning, until lightly browned.
  • Add garlic and continue sautéing, stirring occasionally.

Cooking

  • Pour dry red wine and vinegar over the meat, then add the tomatoes, bay leaves, rosemary sprig, cinnamon, salt, and black pepper.
  • Pour in 1 cup of water to cover everything. Stir well.
  • Cover the pot and lock the lid. Set the machine to cook on high pressure for 20 minutes.

Pearl Onions

  • In a large frying pan, heat sunflower oil over medium-high heat.
  • In batches, add pearl onions and fry until lightly browned.

Finish the Stew

  • Using the Quick Release method, bring pressure to normal. Carefully unlock and open the lid.
  • Remove fried onions from the pan and place them on top of the meat.
  • Shake the cooker to mix onions with meat and spices.
  • Switch the Instant Pot to sauté mode and bring the mixture to a boil.
  • Discard bay leaves. Transfer beef stew to a large bowl. Serve hot.

Notes

Store leftovers in an airtight container for up to 3-4 days. For longer storage, freeze in portions. Experiment with additional vegetables for variety.
