Ingredients
  

For the Bake

  • 1 slice white bread, processed into fine crumbs
  • 1 batch prepared gnocchi
  • 200 g long-stem broccoli, trimmed if needed
  • 140 g pesto
  • 350 g hot-smoked salmon, broken into large flakes
  • 1 piece finely grated zest of 1 lemon
  • Salt, to taste
  • Black pepper, to taste
  • A small drizzle oil for tossing the gnocchi
  • for coating butter for coating the baking dish

Instructions
 

Preparation

  • Preheat the oven to 180°C (350°F) and lightly butter a 20 cm (8-inch) square baking dish.
  • Season the fresh breadcrumbs with a little salt and pepper, then set them aside.

Cooking Gnocchi and Broccoli

  • Bring a pan of salted water to a boil and cook the gnocchi in batches until they rise to the top.
  • Lift the cooked gnocchi out with a slotted spoon, drain well, and place in a large bowl. Toss with a little oil to prevent clumping.
  • In the same boiling water, blanch the broccoli for about 1½ minutes, then drain.
  • Add the broccoli to the gnocchi and stir through the pesto until evenly coated.
  • Gently fold in the smoked salmon, keeping the flakes mostly intact.

Assembling and Baking

  • Spoon the mixture into the prepared baking dish and scatter the seasoned breadcrumbs over the surface.
  • Bake for about 20 minutes, then add the lemon zest on top.
  • Return to the oven for 5 more minutes, until fully heated through and lightly golden on top.

Notes

Serve Gnocchi Salmon Bake directly from the baking dish, allowing guests to help themselves. Pair with a light salad and consider offering extra lemon wedges for added freshness.
