  • 1 teaspoon dried rosemary Can substitute with fresh rosemary

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a mixing bowl, combine olive oil, minced garlic, dried thyme, dried rosemary, salt, and pepper; whisk until smooth.
  • Place chicken breasts in a baking dish and pour the garlic herb mixture over the chicken, ensuring each piece is well-coated.
  • Arrange baby carrots around the chicken in the baking dish.

Cooking

  • Bake in the preheated oven for 25-30 minutes, until the chicken is fully cooked and the carrots are tender.
  • Garnish with fresh parsley before serving.

Notes

For enhanced flavor, marinate the chicken in the herb mixture for a few hours before cooking. Consider adding other vegetables like bell peppers or zucchini for variety.
