  • 1 kg small white potatoes, preferably similar in size Opt for small potatoes for even cooking.
  • 80 g butter Use regular or flavored butter.
  • 2 tablespoons olive oil
  • 4 large cloves garlic, crushed Adjust quantity for desired garlic intensity.
  • Flaky sea salt For seasoning.
  • Mayonnaise or any dipping sauce for serving For serving alongside the potatoes.

Preparation

  • Place the unpeeled potatoes in a pot of cold salted water and bring to a boil. Cook until very soft and easily pierced with a fork, about 25 minutes.
  • While they cook, heat the oven to 200°C / 400°F / Gas, 6. Melt the butter, then mix in the olive oil and crushed garlic.
  • Drain the potatoes and let them sit briefly to allow excess moisture to evaporate.

Baking

  • Arrange the slightly cooled potatoes on a baking tray and gently press each one with a potato masher until flattened but still intact.
  • Spoon the garlic butter mixture over the potatoes and season with flaky salt.
  • Bake for around 20 minutes, or until the edges are crisp and the tops turn golden.

Serving

  • Serve hot with mayonnaise or your preferred sauce.

Notes

Consider garnishing with freshly chopped herbs like parsley or chives before serving. For leftovers, store in an airtight container in the refrigerator for up to three days.
