  • 1 cup sweet corn Can be fresh, frozen, or canned.
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • to taste Salt and pepper
  • for garnish Chopped parsley Optional

Preparation

  • In a pot, bring the water or broth to a boil. Add the rice and a pinch of salt. Reduce heat, cover, and simmer until rice is cooked (about 15-20 minutes).
  • In a separate skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  • Stir in the sweet corn and cook until heated through.
  • Once the rice is done, fluff it with a fork and combine it with the corn and garlic mixture.
  • Season with salt and pepper to taste.
  • Garnish with chopped parsley if desired and serve warm.

Notes

For added flavor, experiment with seasonings or herbs, and consider adding vegetables like bell peppers or peas. Fresh parsley is preferable for garnish.
