  • 1.5 pounds baby potatoes Choose fresh baby potatoes for a naturally sweet flavor.
  • 3 tablespoons unsalted butter Divide into two portions as needed.
  • 1 tablespoon olive oil For searing the potatoes.
  • 4 cloves garlic, minced Use firm cloves for robust flavor.
  • 2 tablespoons chopped fresh parsley For garnish.
  • 1 teaspoon chopped fresh thyme or rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional) Add for heat, adjust to taste.

Preparation

  • Wash and halve the baby potatoes. Pat them dry.
  • Heat 1 tablespoon olive oil and 1 tablespoon of the butter in a skillet over medium-high heat.

Cooking

  • Place potatoes cut-side down and sear for 4-5 minutes until golden brown.
  • Lower the heat to medium. Add remaining butter, garlic, herbs, salt, pepper, and red pepper flakes. Stir gently.
  • Cover with a lid and cook for 10-12 minutes, stirring occasionally, until potatoes are fork-tender.
  • Uncover and cook an additional 2-3 minutes for crispy edges.

Serving

  • Garnish with fresh parsley and serve hot.

Notes

For best results, pat potatoes dry before searing. Use a cast-iron or non-stick pan for optimal crispiness. Serve with dipping sauces.
