  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Tacos

  • 8 small flour or corn tortillas Choose based on dietary preference.
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheddar cheese Can substitute with a dairy-free cheese.
  • 1/4 cup chopped fresh cilantro (optional) For garnish.

Preparation

  • In a medium saucepan over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  • Stir in the honey, BBQ sauce, smoked paprika, salt, and black pepper. Cook for another 2-3 minutes until the mixture is heated through and well combined.
  • Add the shredded chicken to the saucepan, stirring to coat it evenly with the garlic butter honey BBQ sauce. Cook for an additional 3-5 minutes until the chicken is heated through.
  • While the chicken is warming, heat the tortillas in a dry skillet over medium heat for about 30 seconds on each side until soft and pliable.

Assembly

  • To assemble the tacos, place a generous portion of the BBQ chicken mixture on each tortilla. Top with shredded lettuce, diced tomatoes, and shredded cheddar cheese.
  • Garnish with chopped cilantro if desired and serve with lime wedges on the side.

Notes
