  • 1 pound baby potatoes, halved Microwave for a few minutes beforehand if short on time.
  • 4 tablespoons unsalted butter, melted Can substitute with olive oil if desired.
  • 3 cloves garlic, finely minced
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Preparation

  • In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant.
  • Add the beef stew meat to the skillet and season it with onion powder, salt, and pepper. Cook until the beef is browned on all sides, about 6-8 minutes.
  • Add the halved baby potatoes and stir gently to combine.
  • Cover the skillet and cook for about 15-20 minutes or until the potatoes are tender and the beef is cooked through. Stir occasionally.

Serving

  • Serve hot, garnished with fresh herbs like parsley if desired, alongside a side salad or steamed vegetables.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet, adding a little butter or broth if it seems dry.
