Ingredients
  

Salad Base

  • 1 head romaine lettuce Chopped
  • 1 cup cherry tomatoes Halved
  • 1 can black beans Rinsed and drained
  • 1 cup corn Can be fresh, frozen, or canned
  • 1 cup shredded cheese Any cheese of choice
  • 1 avocado diced

Protein

  • 1 lb ground beef or turkey Cooked until browned
  • 1 packet taco seasoning Follow package instructions for preparation

Toppings

  • to taste tortilla chips
  • to taste salsa
  • to taste sour cream

Preparation

  • In a skillet, cook the ground beef or turkey over medium heat until browned. Drain excess fat.
  • Add taco seasoning and water according to package instructions, stirring to combine. Simmer for a few minutes.
  • Chop the romaine lettuce and place it as the base in a large bowl.
  • Layer the cherry tomatoes, black beans, corn, diced avocado, and shredded cheese on top.
  • Once the meat is ready, add it to the salad.
  • Serve with tortilla chips on the side, and top with salsa and sour cream as desired.

Notes

Store leftovers in an airtight container in the fridge. Keep lettuce and toppings separate from the meat and beans for freshness. Consume within 2 days for the best taste.
